Caesar Salad Dressing Recipe

Homemade Caesar Salad Dressing

A Caesar salad is a classic that goes with just about anything. It makes for a perfect side, or meal when you top it off with chicken, grilled or chilled shrimp, salmon, or steak tips.


If you've never had homemade Caesar salad dressing, you are in for a real treat! This Caesar salad dressing recipe will outshine any store bought one; not only with its' inviting taste, but also with its' whole food ingredients. One of the best ways to control the ingredients you consume is to avoid commercially prepared foods, which typically contain ultra-refined and inflammatory oils.


This recipe has been slightly modified from the recipe found on page 47 in the Delicious SP Detox Balance™ Program Recipes book by Standard Process. Also, see page 51 in the book for a Flax or Chia Seed Egg Replacer recipe.



Ingredients:

• 1 pasture-raised egg (or equivalent of 1 egg using flaxseed or chia seed egg replacer)

• 1 tablespoon anchovy paste**

• 1 tablespoon Dijon mustard (no sugar)

• Olive oil to desired consistency

• 1 clove garlic, minced

• Sea salt and pepper


Directions:

In mixer bowl, beat egg until fluffy. Add anchovy paste and mix. Add mustard, olive oil, garlic, salt, and pepper to taste. Beat at low speed until desired consistency is reached. Store in refrigerator. Makes 1 cup.


Note:

**Anchovy paste: ensure preservative free and made with EVO, or to make your own, mash salt- or oil-cured anchovies along with a drizzle of olive oil with a fork until smooth. Okay to freeze in 1tbs amount in an ice cube tray for future use.
