Sautéed Kale

Kale is widely recognized as a superfood, but many people steer away due to its bitter taste. However, when cooked properly, it becomes enjoyable. This recipe, inspired by Domestic Superhero, is packed with flavor and sure to satisfy! The simplicity and quickness of this recipe is a big bonus.


So, is kale really a superfood? As a matter of fact, it is! It is among one of the most nutrient-rich foods. It provides an excellent source of vitamins A, B6, C, K, folate, fiber, carotenoids and manganese. These vitamins and minerals contain anti-inflammatory and immune-enhancing properties. Additionally, it reduces cholesterol levels and aids in combating cancers. Enjoy this simple recipe knowing that you're greatly benefiting your body!



Ingredients:

  • 1 TBS extra virgin olive oil

  • 1 TBS minced garlic

  • 10 ounces chopped kale

  • ½ cup vegetable or any type of bone broth (can also use water)

  • ¼ teaspoon salt

  • ⅛ teaspoon black pepper

  • ¼ teaspoon crushed red pepper flakes

  • 1 ½ TBS apple cider vinegar or red wine vinegar

  • ½ lemon, juiced


Instructions:

  • Using a large skillet over medium heat, add olive oil and garlic; sauté until the garlic is fragrant, about one minute. Add the chopped kale to the skillet, then turn the heat to high and add the broth; stir to coat. Cover the skillet and cook for 5 minutes.

  • Add salt, pepper and red pepper flakes, then cook uncovered for 2-3 more minutes (or until there is no liquid left).

  • Turn off heat, then add red wine vinegar and lemon juice, then toss to coat the sautéed kale.

  • Serve immediately and enjoy!
