Strawberry Salad with a Balsamic Dressing

Strawberry Salad

Strawberry season is here! Strawberries are a great source of vitamin C, folate, manganese and potassium. They are very anti-inflammatory with heart and blood sugar balancing benefits!


Looking for a unique way to use some fresh strawberries that doesn't involve baking or added sugar? Try this bright and delicious strawberry salad! To make it a meal, add chicken or another favorite protein.


Ingredients:

Salad:

  • 6 cups of spring mix or spinach

  • 1/2 cup of pistachios

  • 1/2 cup of walnuts

  • 1/4 cup of green or red onions

  • 3 oz goat cheese or feta

  • 10 strawberries sliced (or about 3-4 cups)

Dressing:

  • 1/2 cup of balsamic vinegar

  • 2 tbsp extra virgin olive oil

  • 1 1/2 tbsp honey

  • 1 tbsp dijon mustard

  • salt, to taste

  • pepper, to taste


Directions:

1. In a large bowl add about 6 cups of spring mix or spinach.

2. Mix in a 1/2 cup of pistachios, 1/2 cup of walnuts, 1/4 cup of green onions(or red), and 3 oz of goat cheese(or feta), and 10 strawberries sliced or about 3-4 cups. Toss well.

3. In a small bowl add: 1/2 cups of balsamic vinegar, 2 TBSP extra virgin olive oil, 1 1/2 TBSP honey, 1 TBSP Dijon mustard and salt and pepper. Whisk well.

4. Add the dressing to the salad starting off slow, you might not want to add it all.

5. Top with extra goat cheese, strawberries, and nuts.

6. Enjoy!
